Power Greens Matcha Energy Bites

Make these energy bites for your future self! They are the perfect sweet freezer treat to meal prep and come together in just two minutes, in a food processor after you soak the dates.
The matcha brings out the fruitiness of Power Greens. Rolling the balls in matcha is optional, you can also roll them in Power Greens powder or finely shredded coconut also works.

INGREDIENTS
1 scoop or individual package Nature’s Sunshine Power Greens
2 cups Medjool dates, pitted
1 1/2 cups boiling water to soak the dates
1 cup hemp seeds
1/2 cup unsweetened coconut flakes
1 cup almond flour
1 tsp. matcha powder, plus more for garnish
1/16 tsp. fine sea salt (the smallest pinch!)
INSTRUCTIONS
1. In a medium bowl, soak the dates in just enough boiling water to cover them (about 1 1/2 cups of water from the kettle). Soak for five minutes. Drain them, but save about 1/4 cup of the water.
2. Place all ingredients in a food processor or blender and process until it forms a “cookie dough–like” texture, about one to two minutes. Add 1 to 3 Tbsp. of the reserved water to make the mixture smoother.
3. Scoop the mixture into balls with a small ice cream scoop and shape with your hands. Place balls on a rimmed baking sheet lined with parchment paper.
4. Place 1 Tbsp. of matcha powder in a bowl and roll each of the balls in it until coated, sprinkling them with the powder also works.
Store in the freezer in an airtight container for up to one month. Defrost on the counter for five to 10 minutes before eating.
